Lancer Dining Services and Lancer Hospitality are owned by company founders Glenn Baron and Steve Craver. Mr. Baron and Mr. Craver have been friends since junior high school and business partners since 1976. Their first enterprise together (not counting shoveling driveways in high school) was creating and running Blue Bell, an ice cream vending company that at one time included 125 ice cream treat trucks that visited Twin Cities parks and neighborhoods during warm summer days.

Lancer Dining Services is the educational food service division of Lancer Hospitality, a well-established Minnesota-based, inter-state hospitality company with corporate offices in Eagan, MN. Lancer Hospitality has a 30+ year history in the food service business.

Steve Craver

Steve Craver owns and directly oversees Lancer Dining Services - the Educational Food Service division of Lancer Hospitality. Mr Craver is originally from Massachusetts and earned a degree in business from Babson College - one of the nation's leading colleges for business and entrepreneurship. He moved to Minnesota in 1970 to launch a food service business with Glenn Baron, his friend since junior high school. Mr Craver met his wife Nancy, a school teacher, in Minnesota, raised a family here and now considers Minnesota his home.
Scott Tobin

Corporate Chef


Mr. Tobin is responsible for overseeing a team of executive chefs at each of the facilities Lancer serves. He also is in charge of menu development, recipe testing, menu nutritional compliance, food quality and consistency and purchasing standards. Mr Tobin has been a member of the Lancer management team since 1996 and served for six years as the Executive Chef at Edinburgh USA. He received his Bachelor of Science Degree from the University of Wisconsin - Stout.
Lindsey Jerke

Registered Dietitian


Ms. Jerke provides critical leadership in the area of nutritional standards and compliance with federal and state school lunch requirements. Prior to joining Lancer’s culinary leadership team, she served as a Clinical Dietitian at Abbott Northwestern Hospital. Her experience also includes serving as a nutritional consultant for Head Start, weight loss counselor and health coach. Ms. Jerke is responsible for ensuring that all of Lancer’s school kitchens are making good food and practicing established procedures for proper food handling, portion controls, sanitation, accurate labeling and distribution of meals and snacks on a daily basis. Ms. Jerke holds her undergraduate degree from College of St. Benedict and is currently working on a Master’s Degree in Nutritional Sciences.
John Fehr

John is Lancer Dining’s Transportation Manager. John has worked for Lancer since 2008 and in that time has seen Lancer Dining grow from five routes to twenty which includes Lancer’s school/daycare hot lunch program and Lancer’s Senior Dining program. John has experience in logistics and customer service.
Brandon Brady

Office Manager/Accounting AP/AR


Brandon has been with Lancer dining since 2012. He received his Bachelor of Science degree from the University of Minnesota in 2006 and is in charge of accounts payable and accounts receivable for Lancer Dining. He also codes production software and manages the office staff on numerous projects within LDS. His hobbies include functional ceramics, guitar, and mountain biking.
Beth Perizzo

Production Manager


Ms Perrizo is Lancer Dining’s Production Coordinator. She has been with the company since 2007 and is responsible for directing daily production of the meals to be delivered and ensuring the proper school commodities are being utilized. She has previously worked in customer service, elementary and high school kitchens and ran a private daycare in her home. Beth is also ServSafe certified and holds a current Minnesota Department of Health Food Manager’s Certificate.

Senior Dining Chef Manager


Christian has been with Lancer since 2010 as our Senior Dining Chef Manager. He went to Culinary School in Las Vegas and received an Associate Degree in Restaurant Management and Culinary arts.
He worked at several restaurants in Las Vegas from 1993-2006 and trained under world class chefs during his tenure there. Christian is responsible for directing all meal production in our Senior Dining Division and makes it his daily mission to provide our seniors with the best, high quality food possible.

Customer Service Manager


As Lancer Dining’s Customer Service Manager, Vanessa ensures overall operations exceed expectations while creating relationships with team members and customers. She assists with managing daily orders, production coordination and resolving customer concerns. For many years, working for one of the largest school districts in the Twin Cities, Vanessa held various kitchen supervisory positions overseeing food preparation, purchasing, receiving, safety, sanitation, personnel administration and training. Yet she has always identified as a customer service professional in her approach to maintaining a healthy and friendly work environment which she believes starts by sharing a smile to those she serves.

Vanessa was born and raised in Mexico but considers herself a Minnesotan for the last 14 years. She loves to cook, watch TV and keep in touch with family and friends. She lives with Edgar her husband, her four children, Edgar jr, Evan, Eric and Evelyn and two dogs, Frida and Kenny.
Sheraye Johnson

Educational Foodservice Production Manager


Sheraye has worked for Lancer Dining since 2009 as the production lead. She is responsible for ensuring the meals for schools and daycares are produced correctly, efficiently and on time to be sent out for delivery every morning. Sheraye has a culinary background and has been working in the food industry for over 11 years. She is also ServSafe certified.
